Hot Wheels Pasta – Your Taste Buds Will Be Rollin on Dubs

It only happens once every couple years or so, but sometimes I’ll think of the name of a recipe before I actually have the recipe. This summery, hot wheels pasta is one such dish. Not sure how “hot wheels” popped into my brain, but pop it did, and the next thing I knew I was at the market buying a box of rotelle.

So the “wheels” part was easy, but what about the “hot?” Just as easy, thanks to an assortment of hot and sweet pepper rings. I used about two-thirds hot peppers to one-third sweet, but you’ll obviously adjust to your personal tolerance. The zucchini provided a nice balance, although this is the kind of pasta that will accept any and all other summer veggies.

Besides what to add, you also have a lot of flexibility when it comes to the final taste and texture. I tend to like my peppers and squash just barely tender for this, but if you cook the sauce a few extra minutes before adding the pasta, you will get a softer, sweeter sauce. My version was a little more bracing, with some bite left to it.

On the other hand, you could cook everything even less, and have what would basically be a hot pasta and vegetable salad. Regardless, no matter what you add, or how long you cook it, I hope you’ll be driven to try this great recipe soon. Enjoy!


Ingredients for 4 portions:
2 generous cups dry rotelle pasta
2 zucchini, sliced
2 to 3 cups of sliced pepper rings, seeded
2 tbsp olive oil
1/2 cup green onion
1 anchovy filet
3 garlic cloves, minced
salt and pepper to taste
2 cups prepared tomato sauce (use a pinch of sugar if sauce needs it)
3/4 cup chicken stock
Italian parsley
grated Parmigiano-Reggiano

B.L.T. Pasta – I’ll Have the Bacon, Lettuce, and Tomato…Hold the Sandwich

I love Twitter for many reasons, but stumbling upon recipe ideas is probably my favorite. I recently saw a picture posted by my friend, Mardi from eat. live. travel. write, for something called, “BLT Pasta,” and I immediately had one of those, “why didn’t I think of that” moments. By the way, I have four or five of those moments a day.

Since I get so many food wishes for pasta recipes, I figured I would give it a go. Plus, as luck would have it, I had some arugula in the fridge just begging to be used. I knew that this combination would taste great, but I wasn’t prepared for just how great.

I decided to use crème fraiche as the main sauce ingredient, and it worked beautifully. It was just rich enough, and the fermented cream’s subtle nuttiness was an excellent foil for the smoky meat, sweet tomatoes, and bitter greens. As I mentioned in the video, crème fraiche is pretty easy to find, but of course we’ll encourage you to follow this link and make your own.

If you can’t find or make some, just use heavy cream along with a squeeze of lemon juice to mimic that essential tanginess. Thank you Mardi (and Twitter) for the inspiration, and if you’re looking for a quick, easy, and very summery pasta idea, I hope you give this a try soon. Enjoy!

Smoked Turkey & Spring Pea Fettuccine – A Pasta From My Salad Days

This rich and creamy, smoked turkey and spring pea fettuccine recipe is inspired by a pasta I learned long ago, working at my first real chef job in San Francisco. 

You may have heard me mention Ryan’s Café in the past, especially if you’ve tried our famous chicken Marsala, and it was at this same restaurant where I learned what I still consider one of the best pasta recipes ever.

As I mention in the video, the original was done with smoked chicken, but for whatever reason smoked turkey is much easier to find at the market. I blame the sandwich industry, but no worries, as the turkey is just as good. There’s just something very special about the way the creamy, slightly sweet, aromatic sauce pairs with the smoky meat. Which reminds me, this is also wonderful with leftover ham.

Regarding what many would consider the dangerously large quantities of cream, I’d like to take a moment to do some math. The recipe makes four appetizer size portions. There’s about 1 3/4 cups of cream used, which is roughly 350 calories worth of butter-fatty goodness per serving. To put that into perspective, those two small ladles of dressing you used during your last trip to the salad bar had about the same amount. So, long story short, relax.

Anyway, now that I’ve armed you with a comeback for when your (probably too thin) friend questions your copious cream usage, I hope you give this very simple, but extraordinarily delicious pasta recipe a try. Enjoy!


Ingredients for 4 small or 2 large portions:
8 oz dry fettuccine noodles, boiled in salted water
For the sauce:
1 tbsp olive oil
1 tbsp minced garlic
1 tbsp minced shallot
1 3/4 cup heavy cream (about 34-36% fat)
6 oz smoked turkey, sliced
1/2 cup green peas, frozen or fresh shelled
2 tbsp minced fresh tarragon leaves
salt, pepper, cayenne to taste
1 tsp lemon zest
Parmigiano-Reggiano to garnish

The Easiest Mac and Cheese EVER!

This is seriously the EASIEST homemade Mac and Cheese recipe I've ever seen and it's actualy good.  I made this today when my oldest daughter wanted me to make her my Mac and Cheese but I was out of butter so I couldn't make a rue which is in my favorite recipe that you can find HERE.  I was very skeptical that this recipe would actually work bcause you cook the pasta directly in the milk and then just add cheese and stir, what's easier than that?  Well I was pleastantly surprised when I made this on a whim and it was actually really delicious.   My only suggestions are that you should use a small pasta with ridges in it to help absorb the milk more easily and I would also only serve this right after it's made.  It gets super thick as it stands and although it still tastes good it's looses that creaminess that I really like in Mac and Cheese.  Try it for yourself and see.  You can find the original recipe at Macaroni and Cheesecake.  I omitted a few ingredients to make it even easier.


Ingredients:

2 cups dried pasta (something with ridges in it will work best)
2 1/2 cups skim milk
1 cup loosely packed cheddar cheese
3/4 teaspoon salt

Directions:

In a saucepan, add pasta and milk. Bring to simmer, then reduce heat to low and cook for 20 to 25 minutes, until pasta is soft, stirring frequently and ensuring milk does not boil.
Turn heat off, add cheese & salt & and stir to combine.  Serve immediately.  If the mac and cheese is too thick add a little bit of milk and stir until you get your desired consistency.

Meatless Meatballs! Celebrating the Magical Meatiness of Mushrooms on Earth Day

I’ve wanted to turn our famous veggie burger recipe into a meatless meatballs recipe for a long time now, and figured there would be no more appropriate occasion than Earth Day to reveal the results. After all, as I joke about in the clip, eating mushrooms is about as close to literally consuming the earth as you can get.

Despite being completely free of meat, at least the animal kind, these “meatballs” were fantastic. Thanks to a thorough browning, the mushrooms provided more than enough savoriness, and the garlic, cheese, and parsley did the rest. As impressive as I thought the taste was, what really blew me away was how close the texture was to actual meatballs.

For me, the true test of any alternative meatless recipe is whether I would eat it again, based on taste and texture alone, and not just because it’s meatless. In this case, I would…many times over. No, I’m not giving up real meatballs, but for a delicious and vegetarian-friendly change of pace, these really were tremendous.

So, whether you're going to make these because you’re a vegetarian who has been searching for a meatless version, or you’re a hard-core meat eater who just can’t believe your ears and eyes, I hope you give these a try soon. Have a happy Earth Day, and as always, enjoy!


Ingredients for 16 small meatballs:
(recipe can easily be doubled!)
1 pound white mushrooms, chopped into very small pieces
2 tbsp olive oil
pinch of salt to sauté mushrooms
1 tbsp butter
1/2 cup minced onions
4 minced garlic cloves
1/2 cup instant oatmeal
1/2 cup breadcrumbs
packed 1/4 cup chopped Italian parsley
1 ounce by weight, Parmigiano-Reggiano cheese, very finely grated on a microplane
(Note: it looks like a ton of cheese in the video, but it was only 1-oz. Because I used a microplane to grate it, it created a huge looking pile of cheese. It would be about 1/2 cup if you measure, but use weight for this ingredient!)
1 tsp salt
freshly ground black pepper and cayenne to taste
pinch of dried oregano
2 eggs
3 cups of your favorite pasta sauce.
*Let mixture sit overnight in fridge. Bake meatballs for 12-15 at 450 degrees F., then simmer in sauce for 30-60 minutes before serving.

Leftover Turkey Manicotti – “Little Muffs” for the Day After the Day After

Manicotti, which means, “little muffs” in Italian, has to be one of the best ways ever for using up leftover Thanksgiving turkey. 

The moist filling will bring the driest bird back from the dead, and you can literally add anything that can be chopped up.

Leftover green bean casserole? Throw it in. Peas and Onions? You bet’cha. Cranberry Sauce? No, don’t be ridiculous. Anyway, thanks to the absence of cheese, tomato, and pasta on the usual Thanksgiving menu, this concoction will erase any connection with the aforementioned feast.

One portioning note: The recipe below made six crepes, and if you make yours slightly smaller, the filling recipe will make six nicely sized manicotti. 

I went low-carb and used all the filling to make four portions, but you should probably just fill all 6 crepes, or even double the recipe to get 12. I think you’ll want leftovers of the leftovers. So whether you make manicotti with the last of the holiday turkey, or just use the technique to recycle other meaty meals, I hope you give this a try soon. Enjoy!


Ingredients for 6 crepes:
2 eggs
3/4 cup all-purpose flour
3/4 cup water
1/2 tsp salt
1/2 tsp olive oil
olive oil for cooking crepes as needed
*Note: Feel free to adjust the batter's thickness by adding a little flour or water until you get a thin consistency as seen in video. 
 
For the filling:
1 cup chopped turkey or anything
1 cup ricotta cheese
1/2 cup Parmigiano-Reggiano cheese
1/2 cup grated mozzarella
1/4 tsp dried marjoram
1/8 tsp red chili flakes
1 egg
1/4 cup chopped Italian parsley
For the rest:
1 1/2 cups marinara sauce
2 tsp olive oil
1/3 cup grated Parmigiano-Reggiano for top
1 tbsp chopped Italian parsley, garnish

Chicken Riggies – What if You Never Saw This?

Way back when, the only way you would’ve found out about a regional recipe like Chicken Riggies, would have been to eat it while traveling through Central New York. 

You would’ve loved it (because there’s nothing not to love) and maybe even tried to recreate it when you got home, but more likely it would have ended up fading into nothing more than a pleasant memory; referred to as “that rigatoni we had in Utica.”

I’m sure you’ll plan a trip through the lovely Utica/Rome area of New York State eventually, but in the meantime, I offer up my take on this thoroughly enjoyable plate of pasta. I think it’s fairly authentic, with two notable exceptions. I use Marsala instead of the standard white wine, and use roughly chopped thigh meat, instead of the more popular chicken breasts.

This results in a sauce that seems much richer than it actually is, and I think you’ll love the subtle sweetness the wine imparts, which works wonderfully with the heat from the peppers. Of course, as I joke about in the video, forget how tasty the recipe is…it’s worth making just for the name alone. What’s for dinner? Chicken Riggies! Riggies? Yes, Riggies!

Anyway, if you’re from Central New York, I hope I did your venerable recipe proud. If you’re not, I hope you give this gorgeous rigatoni recipe a try, and experience what only a few decades ago, you may not have ever heard of. Enjoy!


Ingredients for 4 portions:
1 tbsp olive oil
4 oz hot Italian sausage, crumbled
1 onion, sliced or diced
1 cup sliced mushrooms
salt and pepper to taste
1 1/2 pounds boneless skinless chicken thighs, roughly chopped or cubed
1/2 cup Marsala wine
1 (28-oz) can whole, peeled San Marzano tomatoes, crushed
1 cup chicken broth
1/2 cup heavy cream
1/2 cup water, or as needed
1 1/2 cups chopped hot and/or sweet peppers (any jarred or fresh peppers will work, but cherry peppers are a good choice)
*if using mild peppers, use chili flakes or chili paste to increase the spiciness.
1/2 cup pitted, halved Greek olives
3 cloves minced garlic
1/4 cup chopped Italian parsley
1 pound rigatoni
1/2 cup grated Parmigiano-Reggiano or Romano cheese

Spicy Rice Noodle Salad – Strange But Chew

The first time I had a spicy, cold rice noodle salad, it wasn’t the bold flavors that caught me by surprise, but the strange and addictive texture. It was so different to any pasta salad I’d ever had before, that I was kind of bummed I hadn’t known about this stuff sooner. Makes me sad to think about all the time back I wasted on those stupid, tri-color fusilli salads.

Anyway, this is pretty easy and delicious stuff. I’m not even sure these noodles are technically cooked, but simply softened in very hot water to your personal preference of tenderness. You can, and many do, boil this stuff like pasta for a couple minutes, and have what’s much closer to a proper al dente angel hair, but I much prefer the toothsomeness you get using the hot water method. 

Unlike undercooked wheat flour pastas, this isn’t a gummy, crunch, but much more of a “pop” or “snap” as your teeth break through the almost tender noodles. Once soaked with the vibrant dressing, and topped with the optional, but highly recommended grilled chicken, you have a change-of-pace lunch that will be the talk of the water cooler.

Speaking of the chicken, all you’ll need to do is double the dressing recipe, and pour half over some boneless skinless chicken thighs (or any other cut). Let sit out, marinating for 30 minutes, and then grill to caramelized perfection. I hope you give this great spicy rice noodle salad a try soon. Enjoy!

Ingredients for 2 large servings:
1 package (6.25 oz) thin rice noodle (soaked in almost boiling water until desired tenderness, rinsed, drained thoroughly)
3 garlic cloves, crushed
1/3 cup seasoned rice vinegar
1 or 2 tbsp samal or other ground chili sauce
3 tbsp fish sauce
1 tsp brown sugar
1/4 tsp salt
1 cup carrot julienne
4 green onions, chopped
1/2 cup packed mixture of chopped basil, mint, and cilantro
1/2 cup chopped peanuts
1 tsp sesame oil
Optional:
6 grilled boneless skinless chicken thighs
sliced Fresno chilies

Cheater Pierogi – This is No Polish Joke

During this video for quick and easy cheese pierogi, I joke about my Polish grandmother rolling over in her grave, but after eating several batches of these delicious dumplings, I’m pretty sure Grandma Sophie would have approved. 

I’ve always been a big fan of wonton skins. Not only have I used them for wonton soup, but also for tortellini, ravioli, and various other dumplings.  They’re very user-friendly, but use a damp paper towel to cover the open package as you work, since they can dry out quickly and become harder to work with.

Whenever I post a video like this, the most common questions usually revolve around what alternative fillings would work. Let me handle that issue right now. Anything will work as a filling. Literally. Most high-end grocery stores will have farmer’s cheese, but if you can’t find it, a mixture of half cream cheese and half ricotta would get you very close.

I decided to break with family tradition and serve these with bacon and caramelized onions, as we usually just fry in a little butter and serve with sour cream. I blame Chicago’s Pierogi Heaven for this, since it was during a recent visit that I had a plate served similarly, and it was amazing.

Anyway, whether you’re an old pro, or brand new to the joys of pierogi, I hope you give these easy, cheesy dumplings a try. Remember the old saying...if you’re not cheating, you’re not trying. Enjoy!


Ingredients for about 50-60 Pierogi:
1 1/2 cups warm mashed potato
1 1/2 cup farmer’s cheese, or any cheese blend
1 large egg
salt and pepper to taste
pinch of cayenne
50-60 wonton wrappers
sour cream and chives as needed

Bacon and Onion Sauce (enough to garnish about 12 pierogi)
4 slices bacon, sliced thin
1/2 large yellow onion, diced
2 tsp butter
*After bacon is crisp, drain excess fat, reserving about 2 tbsp to fry pierogi.

Israeli Couscous & Cheese – It Takes a Lot of Balls to Make this Recipe

I’ve always been fascinated with Israeli couscous, also known as pearl couscous, and have received several food wishes recently for a recipe showing it off. I’ve had it most often in cold salads, but for whatever reason I decided to turn it into a hot side dish.

Since it’s nothing more than tiny balls of lightly toasted pasta dough, I thought it would work well in some type of macaroni-n-cheese application. I decided to skip the traditional béchamel and instead use more of a risotto technique. Short story short, it worked great!

I’ve always been a fan of the southern delicacy “pimento cheese,” so I decided to hedge my bets and toss in some of the bittersweet jewels. All in all, I really liked the dish, and how well it held up. The shot you see at the end, when I dig the fork in for a taste, was actually filmed three days after this was made, and had been reheated in the microwave. Despite sitting in the fridge, and the less then gentle reheating, it was still creamy and delicious.

By the way, the chives may seem like a simple, optional garnish, but they’re not. Put them in. They really finished this recipe off right, adding a fresh counterpoint to the semi-rich mixture. I hope you give this “ballsy” recipe a try soon. Enjoy!

2 tsp melted butter
1 cup Israeli couscous
2 cups chicken broth
1/2 cup heavy cream

Creamy Salmon and Leek Pasta Sauce and Obvious Metaphors

-->It feels like we’ve been swimming up river the last few days, as our small, but traumatic kitchen remodel takes place. I’m sure the project will come in well under budget, and way ahead of schedule, but for now, everything takes twice as long to do.

Happily, wanting to keep things simple is what spawned this very tasty salmon and leek pasta sauce. This recipe features two of my favorite foods; wild salmon and crème fraiche.

These types of seafood sauces are usually made with straight cream, or a béchamel, but I find those fall a little flat when compared to the tangy, fermented goodness of homemade sour cream. While it has the same fat content as cream, it just seems so much lighter and complex.

I’ll assume you’ve seen our winning “how to make your own crème fraiche” video, but if not, I highly suggest you do! Homemade crème fraiche will change your life. Check it out, and enjoy!


Ingredients for 2 Portions:
1 tbsp butter
1 large leek, diced, washed thoroughly
salt to taste
1/2 cup white wine
juice from 1/2 lemon
1 cup creme fraiche (you can use all or part cream)
cayenne to taste
1 tsp tarragon Dijon (or regular Dijon)
6 oz boneless skinless salmon, sliced thin (yes, this will work with any other fish, poultry, or meat!)
Cooked pasta for 2!

Only An April Fool Wouldn’t Try This Pasta Primavera

Broken Spaghetti “Risotto” – There’s a Good Reason for Those Quotation Marks

This broken spaghetti “risotto” is many things – a fun-to-make recipe; a visually unique pasta dish; and a great alternative to the same old starchy side dishes – but one thing it’s not, is a risotto. No rice was harmed in the making of this video.

The “risotto” refers to the similar technique used for that famous Italian dish. Like the grains of Arborio rice, the pieces of broken pasta are tossed in hot butter or oil before the liquid is added, but here we’re going even further, and toasting it to a gorgeous nut-brown.

This gives the dish its signature look, as well as adds a subtle nutty/toasty flavor. The rest of the process is similar to risotto as well, with the broth being added in increments, to be absorbed by the noodles before the next splash is added.

The broth amounts below should be very close to what you’ll need, but as I said in the video, depending on the pan, heat, and size of batch, you’ll have to simply adjust on the fly.

As long as you don’t walk away, you should be fine. Just keep stirring until the liquid is almost gone, then taste, and if the pasta is cooked, you’re done. If it needs more, add a little broth and keep going.

I did this as a simple side dish, but if you added some vegetables and shredded chicken, you’d be looking at quite an impressive main course. In fact, don’t be surprised if you see this dish re-imagined here in the future. In the meantime, I hope you give this a try soon. Enjoy!

1 tbsp olive oil
1 cup cut spaghetti, or regular spaghetti broken into very small pieces
2 cloves garlic, finely minced

Classic Chicken Noodle Soup – Thank Goodness We Had Roasted Chicken Broth Around!

In case you haven’t been following along, let me catch you up. On Wednesday we made a gorgeous roasted chicken broth for the expressed purpose of making this soul-warming soup. Here, we used that wonderfully flavorful broth to complete the recipe, and let me tell you, it was incredible.

You know how much I hate to complicate a recipe, and I'll always err on the side of too few ingredients vs. too many, so when I make this chicken noodle soup it’s a constant battle to not add other “stuff.”

Not that’s there’s anything wrong with stuff, per se, but if properly made, this soup is just too amazing in its pure and natural state for any distracting, supercilious additions. By the way, a little advice to you young up-and-coming food bloggers; never use “per se,” and “supercilious” in the same sentence.

Yes, other than the mirepoix, and a tiny pinch of fresh thyme, the rest of this soup is basically chicken and noodles. Speaking of the noodles, I’m hoping you go with the wide ones I used. I was only half-kidding about this soup being a meditation, and egg noodle wrestling is half the fun.

Like I said in the video, this will work with regular chicken stock, but if you do decide to make this, I sincerely hope you go ahead and make the roasted chicken broth first. Enjoy!


Ingredients for 4-6 servings:
1 tbsp melted butter
1 tbsp rendered chicken fat
1/2 cup diced carrot
1/2 cup diced onion
1/2 cup diced celery
1/4 tsp fresh thyme leaves or pinch of dried thyme

4 oz dry wide egg noodles
cayenne, salt and black pepper to taste

Goat Cheese Apple Walnut Pasta – Suspect Supper Turns into Super Side Dish

It sounded so good on paper. Yes, this creamy, tangy goat cheese sauce, spiked with sweet apples and walnuts was going to make quite the memorable winter pasta dinner. The only problem was, halfway through the bowl I suffered that most dreaded of all pasta eating afflictions…palate fatigue.

For whatever reason, after three or four ounces of this perfectly fine concoction, I got tired of eating it. It wasn’t that it started to taste bad; it just became a little tedious. This is not an uncommon phenomenon, especially with a bowl of macaroni.

However, instead of declaring my goat cheese, apple, walnut pasta entrée idea a failure, I decided to cleverly re-brand it as a tasty, seasonal side dish. The same exact recipe that fell a little flat as a main course, turned out to be a stellar side for some roast pork.

Of course, with taste being as subjective as it is, maybe you’ll have a different opinion as to this pasta’s worthiness as a headliner, but I wanted to be clear about my official recommendation. Even simply adding some slices of cooked chicken breast would have transformed the dish into something a little less “one-note.”

By the way, this isn’t something to make way ahead of time, as the walnuts react with the dairy in the sauce, and will turn your leftovers a fairly disturbing purple-blue color! If you’re not going to eat this immediately, then don’t mix in the nuts until service. I hope you give this great winter pasta…err, I mean side dish, a try soon. Enjoy!

2 cups ditalini, or other small macaroni
1 tbsp butter
1 apple, diced
1 cup chicken broth
4 oz fresh creamy-style goat cheese

Minestrone Soup is a Once in a Lifetime Experience

I always feel a little apprehensive when I post a recipe like this minestrone soup. It’s the type of dish I never make the same way twice, and the fear is that someone will watch and assume that this is my “official” version.

You don’t need a recipe for minestrone, just like you don’t need a recipe for a great sandwich, or an epic salad. To make minestrone soup precisely same way every time, using a very specific list of ingredients and amounts, is to trample on the soul of this Italian classic.

Having said all that, what if you happen to make it so incredibly delicious one time that you want to experience the exact same shuddering soupgasm in the future? That seems like a perfectly sound reason for why you should write down the recipe…except cooking food doesn’t work that way.

Your perception of how a recipe tastes involves so many factors above and far beyond the list of ingredients. Remember that time you made that super awesome whatever, and it was so perfect, and then you made it again, exactly the same way, but somehow it just didn’t taste as great? This is why.

So, I hope you give this amazing minestrone recipe a try soon…but only once. Enjoy!


Ingredients:
3 oz pancetta
2 tbsp olive oil
1 diced onion
1 cup diced celery
4 minced garlic cloves
4 cups chicken broth
1 (28-oz) can plum tomatoes, crushed fine
2 cups water, plus more as needed
salt and pepper to taste
1 tsp dried Italian herb blend (mine was thyme, oregano, rosemary, basil)
red pepper flakes to taste
1 cup freshly shucked cranberry beans (aka shelling beans)
2 or 3 cups chopped cabbage
1 (15-oz) can garbanzo beans, drained
1 bunch swiss chard, chopped
2/3 cup raw ditalini pasta
extra virgin olive oil, Parmigiano-Reggiano, and fresh Italian parsley to garnish the top

Smoked Ham and Butternut Squash Spaghetti – Short on Daylight, Long on Flavor

I never film at night, since I don’t like the look of the video when I use artificial lights. Sure, I could actually learn how to use a real lighting kit, but it’s easier for my simple brain to just film during the day.

However, once in a great while, I’ll starting making something, like this smoked ham and butternut squash spaghetti, that looks like it’s going to be so good that I don’t care about lighting quality, and film it anyway.

Other than this less-than-subtle warning about the lighting quality, there’s not a lot to say about this simple and very delicious winter pasta. It will work with literally any type of ham or smoked sausage; and as I mention in the video, bacon would also shine.

Despite the rich and decadent mascarpone, the sauce is actually pretty light when you consider much of the sauce is really just chicken broth and squash. By the way, I didn’t add it, but I think a squeeze of fresh lemon juice at the end would have been a great idea. I hope you give this hearty pasta a try soon. Enjoy!


Ingredients:
14 oz package dry spaghetti
2 tbsp olive oil
4 oz thinly slice smoked ham
3-4 cloves garlic, thinly sliced
red chili flakes to taste
1 1/2 to 2 cups chicken broth, or as needed
3 cups diced butternut squash
salt and pepper to taste
1 cup mascarpone cheese
1-2 tbsp chopped Italian parsley
freshly grated Parmigiano-Reggiano cheese

Know Your Cheese

As most of your know, I LOVE cheese, and two of the most commonly used varieties in my kitchen are fresh mozzarella, and mascarpone. In addition to this recipe, I’ve used mascarpone in several recent videos, and received numerous inquires as to which brand I used.

My usual go-to brand is Galbani, so I was thrilled when Michele and I were recently invited to an event hosted by Lactalis Foodservice. Along with Galbani, Lactalis owns many of markets’ top cheese brands, such as President, Sorrento, and Precious, just to name a few.

This Chef’s Table event was held at Farina, San Francisco, and not only did we enjoy a very nice meal, but we got to talk directly to the people making the cheese. One reason I love shopping at Farmers Markets is that you get to meet the people producing the food you’re about to cook, but it’s not often you get the same experience for a product you buy at the supermarket.

Here are a few highlights from the evening.

Pardon the poor quality photo, but I just had to show this Foccacia di Recco, featuring Galbani’s Bel Paese. It’s sort of like a stuffed pizza, which uses a very basic, unleavened bread dough that’s rolled, spun, and stretched very thin, before being stuffed with the creamy cheese. It’s baked in a very hot oven, where it puffs up, and gets crispy on the outside, while the inside stays soft and cheesy. It was awesome, and something I must figure out how to make!

This was my favorite course of the night. A golden and red beet timbale with Istara Petit Basque and shaved black truffles. What glorious combination of flavors!
